makes 2 parfaits
This yogurt parfait is like eating a healthy (and still crazy delicious) version of apple crisp. I usually end up making a double batch and give the puree to my son (I omit the granola for him). This recipe also makes the best applesauce ever; it’s slightly sweeter than regular applesauce because of the pear, and the cinnamon gives it a warm fall-like quality that is just sheer perfection. This is one healthy breakfast I don’t mind eating repeatedly.
NOTE:
You can make the apple-pear-cinnamon puree the day or night before serving so that it is cold and ready to use for the parfaits
ingredients 1 medium apple, peeled, cored, and cut into ½- to ¾-inch pieces (about 1 cup) 1 ripe or slightly ripe pear, peeled, cored, and cut into ½- to ¾-inch pieces (about 1 cup) ½ teaspoon ground cinnamon 1 cup plain full-fat yogurt ½ cup granola

Pour water into the tank to the highest level (mine is level 3, which equals about 1 cup water). Put the apple and pear in the steamer basket or cooking compartment. Start the cooking process. When the cooking process is done, drain and discard the cooking liquid. Pour the apple, pear, and cinnamon into the blending bowl. Blend for 10 seconds; it’s okay if a few chunks remain. Allow it to cool before using. To make the parfait, layer the yogurt, apple-pear sauce, and granola in a bowl and enjoy.

Fill the water tank with water. Place the apple and pear in the blending bowl. Set the steam timer for 15 minutes. When the cooking process is done, drain and discard the cooking liquid. Add the cinnamon to the blending bowl and blend for 10 seconds; it’s okay if a few chunks remain. Allow it to cool before using. In a 2-quart saucepan set over high heat, bring 1 cup water to a boil, about 3 minutes. Add the apple and pear, reduce the heat to medium-low, and place a tight- fitting lid on the saucepan. Steam for about 10 minutes, or until the apple pieces are easily pierced with a fork. Drain and discard the cooking liquid. Transfer the apple and pear to a blender (or food processor) and add the cinnamon. Blend for 10 seconds; it’s okay if a few chunks remain. Allow it to cool before using. To make the parfait, layer the yogurt, apple-pear sauce, and granola in a bowl and enjoy.
